Soft Christmas Gingerbread Cookies

So, now that December is in full swing, it's officially ok to get excited about Christmas baking :-)

The ones here are the best kind of gingerbread - the gorgeously soft, chewy ones, not the hard ones that break your teeth. These also make perfect gift material (if you can bring yourself to give them away of course and not nibble them all on your own)...

The dough is very simple to make and you don't need to work too hard at all to get it into shape. Don't be tempted to bake them in the oven for too long though, because they will firm up a little after you take them out. So if you love them all soft like I do, you will only need to do them for about 15 minutes. Easy AND quick? The kind of stress-free Christmas preparation you want to hear, huh?

Soft Christmas Gingerbread Cookies
Makes about 15 small cookies:

175g plain flour
90g brown sugar
50g unsalted butter, diced, at room temperature
2 tbsp golden syrup
1 small egg, beaten
1 tsp ground ginger
1 tsp cinnamon
1 tsp bicarbonate of soda
Icing sugar to dust

1) Sift the flour, ginger, cinnamon and soda into a bowl. Mix in the butter and sugar.
2) Beat the egg with the syrup and add to the dry mixture. Fold well to form a dough.
3) Roll the dough out and use a shaped cutter to make as many cookies as you like.
7) Bake at 180 degrees C for 15 minutes, then lightly dust with icing sugar.
