Hungry Jenny Faux Pas: The Hunt for the Mango Cake

The last time I made a mango cake, it was...edible, but basically did not taste of mango at all. Since then, I've made several more attempts to make a sponge cake that actually tastes like mango.

And guess what?

I'm still not there yet.

I've tried frozen mangos, coupled with flaked coconut and polenta, which fell apart, mango chunks still intact and not-so-juicy. (That, by the way, did not even warrant having a photo taken).

Then I tried tinned mango chunks, along with the juice from the tin in these mango and banana muffins.

Hm, yes, I know they look rather odd, and the taste? Well, they were lovely and soft, and pretty sweet but again, didn't taste very mango-like.

Fine, I thought - I'll use fresh mango instead. And proceeded with these mango and almond cake bars.

When they came out tasting sweet yet bland once again, I started to wonder whether mangoes were just a fruit that refuse to release any flavour whatsoever.

In my most recent attempt (shown in the first photo of this post), I went with fresh mango chunks again, plus some tinned mango puree. By this point though, I didn't really have high hopes for the taste. It was soft and sweet, as the other cakes had turned out, but alas, as with the other cakes, there was a distinct lack of mango flavour again.

*sigh*

As yet, I can't figure out where I'm going wrong - I've tried fresh mango, frozen mango, tinned mango and pureed mango - none of which seem to make any difference in the level of mango flavour. I'm not sure what to try next...

The hunt for the mango cake continues...

What about dried mango and mango juice? You may want to soak the dried mango in juice before using.

I'll bet that mango gets overpowered easily. Maybe it needs something like a bread pudding (with a fairly light bread - a sweeter egg-bread?) with mango puree?

Rats, now I want some mango bubble tea and the giant tapioca is at home.

Rosie - aha, now that's a version of mango I haven't tried yet, the dried version! Will have to add that to the list.

Dan - yes, that seems to be the case, that poor mango. Hm, I like the idea of going it as a sweet bread pudding type thing, perhaps that will be the working combo...

The best way to capture any flavour is to use essence - and mango essence does exist!
