*sigh*
It happened again. Tried to bake one thing, and it came out as something else.
These were meant to be Soft Pear and Coconut Cookies.
Well, they came out as So-Soft-They-Almost-Break, Banana Coconut Cookies.
Eh?
Ok, I should point out that I intended these to be healthy - as in no butter, no sugar, no flour and no egg. Should have smelt trouble from that thought alone, I suppose.
Now, banana is a common egg substitute but often overpowers other ingredients in baked goods. So my logic to counteract this was to use a bit less banana, and er, a bit of oil to compensate. Clearly, this wasn't enough of a binder anyway because the cookies just set in the most pathetic way possible - they crumble at the sight of a hand reaching out to them.
The other issue I had was with the pear - well, to be honest, I didn't know I had an issue with it until the cookies came out tasting nothing like pear at all. I had used overripe pears - ones I'd bought a week ago and left in a paper bag and everything to get them mushy-ripe - so figured they'd be super sweet and pear-like. But no, that damn bit of banana simply Took Over.
On the plus side, they did taste like coconut. So half a success at least?
